Scrambled egg with green onion and bacon.
You can’t beat a hearty breakfast to start the day. Rather than go for the usual scrambled egg I wanted to use up some green onion and bacon in the fridge. I just fried up the chopped green onion and bacon together with a pinch of salt and then in a seperate bowl whisked up 4 eggs, 8 tbsp single cream, knob of butter and salt & pepper. Add the egg mixture to the onion and bacon and cook until the right consistency. Serve with anything from sausage, mushrooms, beans etc.
